Gildas

Inspired by Lennox Hastie’s time in the Basque Country, Gildas is an homage to the original pintxo, created with three simple ingredients: a guindilla pepper, an olive, and an anchovy – a snack named in honour of the film Gilda, which screened at the San Sebastian Film Festival in 1946. The Gildas menu is an exploration of Spanish and Australian produce – a space to come together, share small plates, tell stories, and enjoy a sherry.
